Another one I would suggest is La Cocotera Eco Resort in Barra de Santiago, El Salvador. It's on the beach in a secluded little village. The best part is that during the late summer/fall season, guests are allowed to participate in the release of endangered baby turtles into the ocean. It's amazing! Awesome list!
